  • 2 cups rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced (preferably English)
  • ½ cup red onion, thinly sliced

  • ½ cup Kalamata olives, pitted and sliced
  • ¼ cup fresh parsley, chopped
  • ¼ cup extra-virgin olive oil
  • 3 tbsp freshly squeezed lemon juice

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente (about 8 minutes). Drain and rinse under cold water.
