Ingredients
- 9 lasagna noodles
- 2 cups butternut squash (cubed)
- 1 lb sweet Italian sausage
- 1/2 cup pesto
- 8 oz cream cheese

- 1/2 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Wrap garlic in foil with olive oil; roast alongside cubed butternut squash for about 25 minutes until soft.
- In a skillet over medium heat, cook the sweet Italian sausage until browned; drain excess fat.
- In a blender, combine roasted garlic, butternut squash, cream cheese, salt, pepper, and half of the pesto; blend until smooth.
- Spread remaining pesto in the baking dish. Fill lasagna noodles with the mixture, roll them up, and place seam-side down in the dish.
