  • 2 cups fresh green beans
  • 1 cup jasmine rice
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 4 garlic cloves, minced
  • 2 tbsp sesame seeds
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper; place them in the baking dish.
  3. In a bowl, mix soy sauce, honey, minced garlic, and sesame oil until combined; pour over the chicken.
  4. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  5. While the chicken bakes, cook jasmine rice according to package instructions. Stir-fry green beans in a skillet over medium heat for about 5 minutes until bright green.
  6. Serve chicken over rice topped with sautéed green beans and garnish with sesame seeds.
