- 1 medium cucumber (diced)
- 1/2 medium red onion (thinly sliced)
- 1 cup bell peppers (sliced, any color)
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey
- Salt & pepper to taste
Instructions
- Wash all produce thoroughly.
- Chop the cherry tomatoes in half, dice the cucumber, julienne the bell peppers, and thinly slice the red onion.
- In a large bowl, combine mixed greens and chopped vegetables; toss gently.
- In a small jar or bowl, mix olive oil, balsamic vinegar, honey, salt, and pepper; whisk until smooth.
