Ingredients

  • 4 cups mixed greens (romaine, arugula, baby spinach)
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (diced)
  • 1/2 medium red onion (thinly sliced)
  • 1 cup bell peppers (sliced, any color)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt & pepper to taste

Instructions

  1. Wash all produce thoroughly.
  2. Chop the cherry tomatoes in half, dice the cucumber, julienne the bell peppers, and thinly slice the red onion.
  3. In a large bowl, combine mixed greens and chopped vegetables; toss gently.
  4. In a small jar or bowl, mix olive oil, balsamic vinegar, honey, salt, and pepper; whisk until smooth.
  5. Drizzle dressing over salad just before serving and toss gently to coat.
  6. Serve immediately and enjoy!
