  • 3 tablespoons honey

Instructions

  1. Cut the watermelon into small chunks and remove any seeds.
  2. In a blender, combine the watermelon, lime juice, and honey. Blend until smooth.
  3. Taste the mixture; adjust sweetness with more honey or acidity with additional lime juice as desired.
  4. Pour the mixture into popsicle molds; add mint leaves if using.
  5. Freeze for at least 4 hours or until solid.
  6. To serve, run warm water over the outside of the molds before pulling out the popsicles.
