Instructions
- Cut the watermelon into small chunks and remove any seeds.
- In a blender, combine the watermelon, lime juice, and honey. Blend until smooth.
- Taste the mixture; adjust sweetness with more honey or acidity with additional lime juice as desired.
- Pour the mixture into popsicle molds; add mint leaves if using.
- Freeze for at least 4 hours or until solid.
- To serve, run warm water over the outside of the molds before pulling out the popsicles.
