- 4 cloves fresh garlic, minced
- 1 cup bell peppers, chopped (mixed red and green)
- 1 medium zucchini, sliced into half-moons
- 1 cup mushrooms, sliced (shiitake or white)
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Preheat air fryer to 380°F (193°C).
- Chop chicken into bite-sized pieces. Prepare bell peppers, zucchini, and mushrooms.
- In a bowl, mix chicken with garlic, soy sauce, sesame oil, honey, salt, and pepper until thoroughly coated.
- Add vegetables to the marinated chicken and toss gently.
- Spray air fryer basket with nonstick spray. Cook chicken and vegetable mixture in batches for 15-18 minutes, shaking halfway through until chicken reaches an internal temperature of 165°F (74°C).
- Serve hot with extra sauce drizzled on top.
