  • 4 boneless, skinless chicken breasts (1 lb)
  • 4 cloves fresh garlic, minced
  • 1 cup bell peppers, chopped (mixed red and green)
  • 1 medium zucchini, sliced into half-moons
  • 1 cup mushrooms, sliced (shiitake or white)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat air fryer to 380°F (193°C).
  2. Chop chicken into bite-sized pieces. Prepare bell peppers, zucchini, and mushrooms.
  3. In a bowl, mix chicken with garlic, soy sauce, sesame oil, honey, salt, and pepper until thoroughly coated.
  4. Add vegetables to the marinated chicken and toss gently.
  5. Spray air fryer basket with nonstick spray. Cook chicken and vegetable mixture in batches for 15-18 minutes, shaking halfway through until chicken reaches an internal temperature of 165°F (74°C).
  6. Serve hot with extra sauce drizzled on top.
