  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 1 medium zucchini, sliced
  • 1 bell pepper (any color), chopped
  • 2 cups spinach or kale
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another minute.
  2. Add chopped carrots, bell pepper, and zucchini to the pot. Cook for another 5 minutes until slightly softened.
  3. Stir in canned diced tomatoes with their juices and then add vegetable broth. Bring to a gentle simmer.
  4. Season with Italian seasoning, salt, and pepper; let simmer for about 20 minutes.
  5. In the last five minutes of cooking, stir in spinach or kale until wilted.
  6. Serve hot, optionally with crusty bread on the side.
