Ingredients
  

Base
  • 6 pcs digestive biscuits gluten-free
  • 20 g melted butter or dairy-free butter
Filling
  • 250 ml full-fat coconut milk
  • 1 pcs orange juice & zest
  • 200 g dark chocolate
  • 2 tbsp maple syrup optional

Method
 

Base Preparation
  1. Add the digestive biscuits to a food processor and pulse until you have a fine crumb mixture. Add the melted butter and pulse again until combined.
  2. Divide the base mixture between 6 small dessert glasses/pots and refrigerate while you make the chocolate orange layer.
Filling Preparation
  1. Break up the chocolate into small pieces and add to a saucepan along with the coconut milk and orange juice.
  2. Cook over a medium heat until the chocolate is completely melted and you have a smooth mixture.
  3. Add the orange zest and sweetener (if using any). Mix thoroughly, then pour on top of the chilled biscuit bases.
  4. Leave to cool slightly before transferring to the fridge to set. Allow to chill in the fridge for 2-3 hours, or until set.
