Base Preparation
- Add the digestive biscuits to a food processor and pulse until you have a fine crumb mixture. Add the melted butter and pulse again until combined.
- Divide the base mixture between 6 small dessert glasses/pots and refrigerate while you make the chocolate orange layer.
Filling Preparation
- Break up the chocolate into small pieces and add to a saucepan along with the coconut milk and orange juice.
- Cook over a medium heat until the chocolate is completely melted and you have a smooth mixture.
- Add the orange zest and sweetener (if using any). Mix thoroughly, then pour on top of the chilled biscuit bases.
- Leave to cool slightly before transferring to the fridge to set. Allow to chill in the fridge for 2-3 hours, or until set.
