Ingredients
  

  • 3 cups Leftover Mashed Potatoes
  • 3 slices Bacon, crumbled
  • 1 block Cheddar Cheese, cut into cubes
  • 1.5 cups Breadcrumbs
  • 2 tablespoons Grated Parmesan
  • 2 Large Eggs
  • 1-2 tablespoons Milk
  • Salt, to taste
  • Black Pepper, to taste
  • Cooking Oil Spray
  • 0.5 teaspoon Garlic Powder, optional

Method
 

  1. In a medium-sized bowl, mix leftover mashed potatoes with crumbled bacon, salt, and pepper. If desired, add garlic powder.
  2. With floured hands, scoop mashed potato into the palm of your hand and flatten into a disk. Add a cube of cheese to the center and carefully form into a ball with the cheese completely covered with potatoes.
  3. Dip each mashed potato ball in flour, then egg, then breadcrumbs. Repeat dipping back into the egg and then breadcrumbs for an extra crispy coating.
  4. Add a single layer of mashed potato balls to the air fryer basket and lightly spray with cooking oil.
  5. Cook at 370 degrees Fahrenheit for 4 minutes, shake the basket, spray with additional oil as needed, and continue baking for 2-3 more minutes until golden brown. Be careful not to overcook.
