Method
Prepare the Crust
- Preheat the oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and let cool.
Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese until smooth. Add sour cream, sugar, and vanilla extract, mixing until well combined.
- Add eggs one at a time, mixing on low speed until just combined. Do not overmix.
- Pour the cheesecake filling over the cooled crust in the springform pan.
Bake the Cheesecake
- Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour. Remove from oven and let cool to room temperature.
- Refrigerate for at least 4 hours or overnight before decorating.
Decorate the Cheesecake
- Once chilled, top the cheesecake with whipped cream, arranging blueberries in the top left corner to represent the stars and sliced strawberries in rows to represent the stripes.
- Slice and serve chilled.
