American Flag Cheesecake

Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Cheesecake Filling
  • 3 packages cream cheese softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
Toppings
  • 1 cup blueberries
  • 1 cup strawberries sliced
  • 1 cup whipped cream for decoration

Method
 

Prepare the Crust
  1. Preheat the oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and let cool.
Make the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth. Add sour cream, sugar, and vanilla extract, mixing until well combined.
  2. Add eggs one at a time, mixing on low speed until just combined. Do not overmix.
  3. Pour the cheesecake filling over the cooled crust in the springform pan.
Bake the Cheesecake
  1. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
  2. Turn off the oven and leave the cheesecake inside for 1 hour. Remove from oven and let cool to room temperature.
  3. Refrigerate for at least 4 hours or overnight before decorating.
Decorate the Cheesecake
  1. Once chilled, top the cheesecake with whipped cream, arranging blueberries in the top left corner to represent the stars and sliced strawberries in rows to represent the stripes.
  2. Slice and serve chilled.

Notes
