Ingredients
  

  • 6 Tablespoons light brown sugar
  • 1.5 teaspoons ground cinnamon
  • 2 medium apples (Granny Smith, Gala) peeled and diced in 1/2 pieces
  • 2 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter room temperature
  • 2/3 cup sugar
  • 2 large eggs room temperature
  • 1.5 teaspoons vanilla extract
  • 0.5 cup milk
  • 3/4 cup powdered sugar
  • 2 Tablespoons milk
  • 0.5 teaspoon vanilla extract

Method
 

Preparation
  1. Grease a 9 x 5-inch loaf pan with baking spray and line it with parchment paper, leaving a large overhang on the sides.
  2. Adjust the oven rack to the lower third position and preheat the oven to 350 F.
  3. Mix ground cinnamon and brown sugar, and set aside.
  4. Peel and dice apples into small 1/2 inch chunks, set aside.
  5. Beat room temperature butter with sugar and vanilla extract. Add eggs and mix to combine.
  6. Add the mixture of dry ingredients (flour, salt, and baking powder) and mix to combine.
  7. Slowly pour in milk and mix just to combine, scraping down the bowl to ensure no lumps remain.
  8. Toss apples with cinnamon and 2 Tablespoons granulated sugar, set aside.
Baking
  1. Spread half of the batter in the prepared pan, scatter half of the apple mixture, and sprinkle with half of the cinnamon-sugar mixture.
  2. Spoon the remaining batter over the apples and gently smooth the top. Scatter the remaining apples and sprinkle with the cinnamon-sugar mixture.
  3. Bake in the preheated oven for about 55-70 minutes, or until a toothpick inserted in the center comes out clean. If necessary, tent with aluminum foil after 30-40 minutes to prevent browning.
  4. Remove from the oven and cool for 20-30 minutes in the pan set on a cooling rack. Use the parchment paper overhang to lift the bread from the pan.
  5. To make the glaze, stir powdered sugar, milk, and vanilla. Drizzle over the cooled bread.
