Preparation
- Combine the honey, hot sauce, and chilli flakes in a bowl and warm in the microwave for about 20 seconds. Stir and leave to cool.
- Horizontally slice the chicken breasts to create 4 even-sized pieces.
- In a small bowl, combine paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
- Set up 3 large shallow dishes: one with flour mixed with half of the seasoning, one with beaten egg, and one with Panko combined with the remaining seasoning.
- Dredge each piece of chicken through the flour, then the egg, and finally the breadcrumbs. Place on a tray.
- Heat enough oil in a large pan over medium-high heat to coat the bottom. Once hot, carefully add the chicken in batches if needed, and fry for 3-4 minutes on each side until golden and cooked through.
- Place the fried chicken on a wire rack.
- Top each piece of chicken with crumbled feta and place under the grill on high until golden and soft.
- Drizzle with hot honey before serving.
