Ingredients
  

Sauce
  • 1/3 cup Honey 110g
  • 1.5 tsp Hot Sauce
  • 3/4 tsp Chilli Flakes
Chicken
  • 500 g Chicken Breasts About 2 pieces
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper
  • 35 g Plain Flour 1/4 cup
  • 2 Eggs beaten
  • 65 g Panko Breadcrumbs 1 cup
  • tbsp Veg Oil 6-8 tbsp as needed
  • 200 g Feta crumbled, about 7oz

Method
 

Preparation
  1. Combine the honey, hot sauce, and chilli flakes in a bowl and warm in the microwave for about 20 seconds. Stir and leave to cool.
  2. Horizontally slice the chicken breasts to create 4 even-sized pieces.
  3. In a small bowl, combine paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
  4. Set up 3 large shallow dishes: one with flour mixed with half of the seasoning, one with beaten egg, and one with Panko combined with the remaining seasoning.
  5. Dredge each piece of chicken through the flour, then the egg, and finally the breadcrumbs. Place on a tray.
  6. Heat enough oil in a large pan over medium-high heat to coat the bottom. Once hot, carefully add the chicken in batches if needed, and fry for 3-4 minutes on each side until golden and cooked through.
  7. Place the fried chicken on a wire rack.
  8. Top each piece of chicken with crumbled feta and place under the grill on high until golden and soft.
  9. Drizzle with hot honey before serving.

Notes
