Ingredients
  

For the Salad
  • 4-5 medium carrots fresh and crunchy
  • 2 cups cabbage finely shredded
  • 1 medium red bell pepper diced
  • 4 stalks green onions sliced thin
  • 1/4 cup cilantro chopped
For the Dressing
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup

Method
 

Preparation
  1. Wash and peel the carrots. Slice them into thin, matchstick-sized strips using a julienne peeler or a sharp knife.
  2. In a small bowl, whisk together the soy sauce, rice vinegar, and sesame oil until well combined.
  3. In a large mixing bowl, toss the julienned carrots with the dressing until evenly coated.
  4. Chop the cilantro and green onions, then sprinkle them over the carrot mixture.
  5. Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes.
