Ingredients
  

  • 250 ml beef stock or broth
  • 3 Tbsp hoisin sauce
  • 2 Tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp cornflour/cornstarch
  • 400 g beef steak, sliced thinly
  • 2 tsp brown sugar
  • 1 tsp cornflour/cornstarch
  • 3 Tbsp neutral oil
  • 1 red pepper, sliced
  • 2 spring onions, finely sliced
  • 3 cm piece of ginger, peeled and diced
  • ? red chilli, sliced
  • 200 g green beans, trimmed
  • 100 g mushrooms, sliced
  • 50 g peanuts, roughly crushed
  • 2 tsp sesame seeds
  • freshly ground black pepper to taste

Method
 

Preparation
  1. Whisk all sauce ingredients together and set aside. Toss the steak with the brown sugar and cornflour, then season well with salt and pepper.
  2. Heat 2 tablespoons of the oil in a large wok or frying pan. When hot, cook the beef for 2-3 minutes until browned. Transfer to a plate while cooking the vegetables.
  3. Add the remaining oil to the pan along with red pepper, spring onion whites, ginger, and chilli. Cook, stirring often for 2 minutes.
  4. Add the green beans and mushrooms, cooking for a further 2 minutes. Stir in the sauce and cover, cooking for 4-5 minutes until softened.
  5. Return the beef and any resting juices to the pan, cooking for 2 minutes while tossing to combine. Transfer to a serving platter.
  6. Scatter the peanuts, sesame seeds, and spring onion greens over the stir fry and serve immediately with steamed rice.

Notes

Feel free to substitute beef with chicken, shrimp, or tofu. Additional veggies can be added for more nutrition and color.
