Ingredients
  

Vegetables
  • 1 lb asparagus trimmed and cut into pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium potato peeled and diced
  • 4 cups vegetable broth
Dairy
  • 1 cup heavy cream or coconut cream for a vegan option
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Prepare the Soup
  1. In a large saucepan, saut? the onion and garlic over medium heat until translucent.
  2. Add the asparagus and potato, and cook for about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the vegetables are tender.
Blend and Serve
  1. Remove from heat and let cool slightly. Blend the soup in batches until smooth.
  2. Stir in the heavy cream, salt, pepper, and lemon juice. Heat gently before serving.
  3. Serve hot or chilled, garnished with extra asparagus tips or a drizzle of cream.

Notes
