Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Avocado
  • 1 ripe avocado peeled and pitted
Condiments
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lime juice freshly squeezed
Seasonings
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika for garnish
Garnish
  • 2 tablespoons chopped fresh cilantro

Method
 

Prepare the Eggs
  1. Place the eggs in a pot and cover them with water. Bring to a boil over medium-high heat.
  2. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 10-12 minutes.
  3. Transfer the eggs to an ice bath to cool for 5 minutes, then peel them.
Make the Filling
  1. Cut the peeled eggs in half lengthwise and remove the yolks.
  2. In a mixing bowl, mash the yolks with the avocado, mayonnaise, Dijon mustard, lime juice, salt, and pepper until smooth.
Assemble the Deviled Eggs
  1. Spoon or pipe the avocado mixture back into the egg whites.
  2. Sprinkle with paprika and garnish with chopped cilantro.
