  • 2 medium ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 medium lime juiced
  • 2 tablespoons olive oil
  • to taste salt
  • to taste black pepper

Method
 

Preparation
  1. In a mixing bowl, combine the diced avocados, halved cherry tomatoes, diced cucumber, finely chopped red onion, and chopped cilantro.
  2. Drizzle with lime juice and olive oil, then season with salt and black pepper to taste.
  3. Gently toss the salad to combine all ingredients without mashing the avocados.
  4. Serve immediately or chill in the refrigerator for 10 minutes before serving.
