  • 2 medium Bell peppers Diced

  • 1 teaspoon Cumin Earthy spice
  • 2 tablespoons Chili powder Adjust to taste
  • 1 teaspoon Oregano Dried or fresh
For the Liquid
  • 4 cups Beef broth Low-sodium if preferred
  • 1 cup Tomato sauce For thickness and richness

Cooking Steps
  1. Sear the Meat: Heat a large pot over medium-high heat. Add the short ribs and chorizo, searing until golden-brown, about 5-7 minutes.
  2. Saut? Aromatics: Remove meat and add onions, garlic, and bell peppers to the pot. Saut? until softened, about 3-4 minutes.
  3. Add Spices: Stir in cumin, paprika, and chili powder; cook for another minute.
  4. Deglaze the Pot: Pour in beef broth or red wine, scraping up browned bits from the pot.
  5. Combine Ingredients: Return seared meat to the pot with diced tomatoes and kidney beans. Stir well.
  6. Simmer Slowly: Bring to a boil, reduce heat to low, cover, and simmer for at least 2 hours.
  7. Adjust Seasoning: Taste and add salt, pepper, or extra spices as needed.
  8. Serve & Enjoy: Ladle chili into bowls and top with garnishes like shredded cheese or cilantro.
