Ingredients
  

Chicken and Marinade
  • 2 pounds boneless skinless chicken breasts
  • 3 tbsp avocado oil
  • 1 tsp kosher salt
  • 2 cups bbq sauce
  • 8 [6-inch] wooden skewers pre-soaked
Herby Ranch Dressing
  • 1 cup light tasting oil
  • 1 large egg
  • ? cup unsweetened full fat coconut milk
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 2 cloves minced garlic
  • ? cup finely chopped fresh dill fronds
  • ? cup finely chopped fresh parsley
  • 1 tsp freshly cracked black pepper
Salad Ingredients
  • 4 ears corn
  • 2 tbsp avocado oil
  • 8 cups thinly sliced romaine lettuce or 2 small heads
  • 6 green onions thinly sliced (green part only)
  • 2 cups quartered grape tomatoes
  • 1 [15-ounce] can black beans drained and rinsed
  • ? cup loose packed freshly chopped cilantro leaves
  • 2 tbsp freshly chopped basil leaves
  • 1 large avocado peeled, seed removed, and diced medium

Method
 

Preparation
  1. Pound the chicken until it is a uniform ? inch thickness, cube into 2-inch pieces, and marinate with oil, salt, and 1 cup of BBQ sauce for at least 20 minutes at room temperature or 4-8 hours in the refrigerator.
  2. To make the Herby Ranch, combine oil, egg, coconut milk, lemon juice, red wine vinegar, salt, onion powder, and garlic in a jar and blend with an immersion blender until emulsified. Stir in dill, parsley, and black pepper, then refrigerate.
  3. Drizzle corn with avocado oil, coat evenly, and grill over medium-high heat for about 10-12 minutes, turning every 2 minutes.
  4. Meanwhile, grill the skewers for 3-4 minutes on one side until grill marks form, then flip, baste with reserved BBQ sauce, and continue grilling until cooked through, about 3-4 more minutes.
  5. In a large bowl, combine lettuce, green onions, tomatoes, black beans, cilantro, and basil. Add dressing and toss until well coated.
  6. Remove corn from the cob and add to the salad with diced avocado. Gently toss to combine.
  7. Serve with grilled chicken.
