Ingredients
  

Beef and Vegetables
  • 1 lb beef sirloin thinly sliced
  • 2 cups cooked rice preferably day-old
  • 1 cup mixed vegetables peas, carrots, and corn
  • 2 tablespoons soy sauce adjust to taste
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 2 eggs large eggs beaten
  • 2 scallions scallions chopped
  • salt to taste
  • pepper to taste

Method
 

Preparation
  1. Heat sesame oil in a wok over medium-high heat.
  2. Add the sliced beef and stir-fry until browned, about 3-4 minutes.
  3. Add minced garlic and mixed vegetables, stir-frying for another 2-3 minutes.
  4. Push the beef and vegetables to one side of the wok and pour the beaten eggs into the empty side, scrambling until fully cooked.
  5. Add the cooked rice to the wok, mixing everything together.
  6. Pour soy sauce over the rice and stir-fry for another 2-3 minutes, seasoning with salt and pepper to taste.
  7. Garnish with chopped scallions before serving.

Notes

For best results, use day-old rice as it is drier and will fry better without becoming mushy.
