Ingredients
  

For the Muffin Batter
  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 cup granulated sugar can substitute with coconut sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 large eggs or flax eggs for vegan option
  • 1 cup milk or almond/oat milk for dairy-free
  • 1/2 cup vegetable oil or melted butter
For the Filling
  • 1 cup cherries (fresh or frozen) pit them if using fresh
  • 1/2 cup chocolate chips optional
For the Topping
  • 1 cup powdered sugar for dusting
  • 1 cup whipped cream optional

Method
 

Preparation
  1. Preheat your oven to 350?F (175?C).
  2. Prepare your muffin tin by lining it with paper liners or lightly greasing each cup.
Mixing
  1. Mix the dry ingredients in a large bowl?flour, cocoa powder, baking powder, and salt. Whisk together until well combined.
  2. Combine the wet ingredients in another bowl?eggs, milk, melted butter, and vanilla extract. Stir gently until blended.
Combining
  1. Fold the wet ingredients into the dry mixture using a spatula until no dry flour remains.
  2. Add in the chocolate chips and chopped cherries, folding them in carefully.
Baking
  1. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
  2. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  3. Cool the muffins in the tin for 5 minutes before transferring them to a wire rack.
