Prepare the Blackening Spice
- In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, black pepper, and salt.
Season the Salmon
- Pat the salmon fillets dry with paper towels. Rub the blackening spice mix generously over both sides of each fillet.
Cook the Salmon
- Heat olive oil in a cast iron skillet over medium-high heat until shimmering. Add the salmon fillets, skin-side down, and cook for about 4-5 minutes until the skin is crispy.
- Carefully flip the fillets and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily with a fork.
Serve
- Remove the salmon from the skillet and let rest for a minute. Serve with lemon wedges.
