Blueberry Sauce
  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon cornstarch optional for thickening
  • 1 tablespoon water for cornstarch mixture

Method
 

Prepare the Blueberry Sauce
  1. In a saucepan over medium heat, combine the fresh blueberries and granulated sugar.
  2. Stir gently until the blueberries start to release their juices, about 5 minutes.
  3. Add the lemon juice and stir to combine.
  4. If using cornstarch, mix it with water in a small bowl to create a slurry, then add to the saucepan.
  5. Cook for an additional 5 minutes, stirring occasionally, until the sauce thickens slightly.
  6. Remove from heat and let cool before serving over cheesecake.
