Ingredients
  

Lamb
  • 3 pounds Boneless leg of lamb Trimmed and tied
Marinade
  • 4 cloves Garlic Minced
  • 2 tablespoons Fresh rosemary Chopped
  • 2 tablespoons Fresh thyme Chopped
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black pepper Freshly ground
Optional
  • 1 cup Red wine For deglazing
  • 1 cup Beef broth For sauce

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper to create a marinade.
  3. Rub the marinade all over the boneless leg of lamb, ensuring it is well coated. Let it marinate for at least 30 minutes at room temperature.
Roasting
  1. Place the marinated lamb in a roasting pan and insert a meat thermometer into the thickest part of the meat.
  2. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  3. Remove the lamb from the oven and let it rest for 15 minutes before slicing.
Sauce (Optional)
  1. While the lamb rests, deglaze the roasting pan with red wine, scraping up any browned bits.
  2. Add beef broth and simmer for 5-10 minutes until slightly thickened. Strain if desired.
