Ingredients
  

Chickpeas
  • 2 cans chickpeas rinsed and drained
Vegetables
  • 1 bunch Swiss chard washed and chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium carrot diced
Liquids and Seasonings
  • 1 cup vegetable broth
  • 1 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Garnish
  • 1 tbsp lemon zest
  • 2 tbsp fresh parsley chopped

Method
 

Cooking the Base
  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and carrot, saut?ing until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
Adding Chickpeas and Seasoning
  1. Stir in the chickpeas, vegetable broth, cumin, paprika, salt, and black pepper. Bring to a simmer.
  2. Reduce heat to low and let it cook for 10 minutes, allowing the flavors to meld.
Incorporating Swiss Chard
  1. Add the chopped Swiss chard to the skillet, stirring until wilted, about 5 minutes.
  2. Stir in the lemon juice and adjust seasoning if necessary.
Serving
  1. Serve hot, garnished with lemon zest and fresh parsley.
