Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter browned
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated carrots
Optional Toppings
  • 1/2 cup chopped walnuts for topping
  • 1/2 cup cream cheese frosting for drizzling

Method
 

Prepare the Brown Butter
  1. In a saucepan, melt the butter over medium heat until it turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Combine Wet Ingredients
  1. In another bowl, combine the browned butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until well combined.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated carrots and walnuts if using.
Bake
  1. Pour the batter into a greased baking pan and spread evenly. Bake at 350?F (175?C) for 25-30 minutes or until a toothpick comes out clean.
Cool and Serve
  1. Allow the bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Drizzle with cream cheese frosting if desired before serving.
