Ingredients
  

Butter Beans
  • 2 cups butter beans cooked or canned
Leeks
  • 2 leeks cleaned and sliced
Garlic
  • 2 cloves garlic minced
Vegetable Broth
  • 1 cup vegetable broth
Olive Oil
  • 2 tablespoons olive oil
Salt and Pepper
  • to taste salt
  • to taste pepper
Fresh Herbs
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Ingredients
  1. Rinse and drain the butter beans if using canned. Clean and slice the leeks, and mince the garlic.
Cook the Leeks
  1. In a skillet, heat the olive oil over medium heat. Add the sliced leeks and saut? until they are soft and translucent, about 5-7 minutes.
Combine Ingredients
  1. Add the minced garlic to the skillet and cook for an additional minute until fragrant. Stir in the butter beans and vegetable broth.
Simmer
  1. Bring the mixture to a gentle simmer. Season with salt and pepper to taste. Cook for about 15-20 minutes, allowing the flavors to meld.
Finish and Serve
  1. Remove from heat, stir in the chopped parsley, and serve warm.
