Ingredients
  

For the Casserole
  • 2 cans canned chicken 12.5 oz each; drain and shred before using
  • 1 cup cooked rice or substitute with quinoa
  • 1 cup cream of mushroom soup can use cream of chicken instead
  • 1 cup frozen mixed vegetables or fresh veggies, slightly cooked
  • 1 teaspoon garlic powder or fresh minced garlic (about 2 cloves)
  • 1/2 teaspoon black pepper adjust to taste
For Topping
  • 1 cup shredded cheddar cheese or mozzarella/pepper jack
  • 1/2 cup breadcrumbs panko for extra texture
  • 2 tablespoons butter melted; olive oil as substitute

Method
 

Preparation
  1. Gather all your ingredients including canned chicken, seasonings, and any veggies or sauces.
  2. Preheat your oven to 375?F.
  3. In a large bowl, combine the drained canned chicken with your favorite seasonings and mix well.
  4. If including vegetables, chop them and fold into the chicken mixture.
  5. Pour the chicken mixture into a greased baking dish, spreading it out evenly.
  6. Bake for about 25-30 minutes or until heated through and slightly bubbly around the edges.
