Ingredients
  

For the Tart
  • 1 sheet puff pastry thawed
  • 2 large red onions sliced
  • 2 tablespoons olive oil
  • 1 cup goat cheese crumbled
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 teaspoon thyme fresh or dried
  • to taste salt
  • to taste pepper

Method
 

Prepare the Onions
  1. Heat olive oil in a skillet over medium heat. Add sliced red onions and cook, stirring occasionally, until caramelized, about 20 minutes.
Assemble the Tart
  1. Preheat the oven to 375°F (190°C). Roll out the puff pastry and fit it into a tart pan. Prick the bottom with a fork.
  2. In a mixing bowl, whisk together eggs, heavy cream, thyme, salt, and pepper. Stir in the caramelized onions and goat cheese.
  3. Pour the mixture into the prepared pastry shell.
Bake the Tart
  1. Bake in the preheated oven for 25-30 minutes, or until the tart is set and golden brown.
  2. Let cool slightly before slicing and serving.
