Prepare the Carrot Cake Layer
- Preheat the oven to 350?F (175?C). Grease and flour a springform pan.
- In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat the eggs and oil together. Stir in the grated carrots and walnuts.
- Combine the wet and dry ingredients until just mixed. Pour into the prepared pan.
Prepare the Cheesecake Layer
- In a large bowl, beat the cream cheese until smooth. Add sour cream, sugar, eggs, and vanilla, mixing until well combined.
- Pour the cheesecake mixture over the carrot cake layer in the springform pan.
- Bake for 60 minutes or until the center is set. Allow to cool completely before refrigerating for at least 4 hours.
Prepare the Frosting
- In a mixing bowl, beat together softened cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla, mixing until fluffy.
- Spread the frosting over the chilled cheesecake before serving.
