Ingredients
  

Casserole Base
  • 1 lb Ground Beef or turkey
  • 1 can Refried Beans
  • 1 cup Corn canned or frozen
  • 1 cup Salsa your favorite variety
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 8 tortillas Flour Tortillas cut into strips
  • 2 cups Shredded Cheese cheddar or Mexican blend

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add refried beans, corn, salsa, chili powder, and cumin to the skillet. Stir to combine and heat through.
Assembly
  1. In a mixing bowl, layer half of the tortilla strips at the bottom of the casserole dish.
  2. Spread half of the beef mixture over the tortillas, then sprinkle with half of the shredded cheese.
  3. Repeat the layers with the remaining tortillas, beef mixture, and cheese.
Baking
  1. Cover the casserole with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  3. Let it cool for a few minutes before serving.
