Ingredients
  

Pasta and Chicken
  • 8 oz Penne pasta or any pasta of choice
  • 2 cups Cooked chicken breast sliced or shredded
Vegetables
  • 4 cups Romaine lettuce chopped
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Parmesan cheese shredded
Dressing
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1 tbsp Lemon juice freshly squeezed
  • 1 tsp Garlic minced
Toppings
  • 1/4 cup Croutons optional
  • 1/4 cup Bacon bits optional

Method
 

Prepare the Pasta
  1. Cook the penne pasta according to package instructions. Drain and rinse under cold water to cool.
Grill the Chicken
  1. Season the chicken breasts with salt and pepper. Grill over medium heat until cooked through, about 6-7 minutes per side. Let rest, then slice.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, grilled chicken, romaine lettuce, cherry tomatoes, and Parmesan cheese.
Add Dressing
  1. In a small bowl, whisk together the Caesar dressing, lemon juice, and minced garlic. Pour over the salad and toss to combine.
Serve
  1. Transfer the salad to a serving bowl and top with croutons and bacon bits if desired. Serve immediately.
