Ingredients
  

Vegetables
  • 2 cups fresh corn kernels can use canned or frozen
  • 1 medium red onion finely chopped
  • 1 medium red bell pepper finely chopped
  • 1 medium jalape?o seeded and minced
  • 1 bunch cilantro chopped
  • 1 medium lime juiced
Seasoning
  • 1 teaspoon chipotle powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the ingredients
  1. In a mixing bowl, combine the corn, red onion, red bell pepper, jalape?o, and cilantro.
  2. Add the lime juice, chipotle powder, salt, and black pepper to the bowl.
Mix and serve
  1. Toss all the ingredients together until well combined.
  2. Taste and adjust seasoning if necessary.
  3. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
