Prepare Chocolate Mousse
- In a mixing bowl, whisk the heavy cream until soft peaks form.
- Melt the dark chocolate in a microwave or double boiler until smooth.
- Fold the melted chocolate into the whipped cream gently until fully combined.
- Add sugar and vanilla extract, then mix until smooth.
Prepare Strawberry Topping
- In a small bowl, combine sliced strawberries and sugar. Let sit for 10 minutes to macerate.
Assemble Dessert Cups
- Spoon the chocolate mousse into dessert cups, filling them halfway.
- Add a layer of macerated strawberries on top of the mousse.
- Top with more chocolate mousse until cups are filled.
- Chill in the refrigerator for at least 1 hour before serving.
- Garnish with mint leaves before serving.
