Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1/4 teaspoon salt
Filling
  • 2 cups rhubarb chopped
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Prepare the crust
  1. Preheat the oven to 350?F (175?C). In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly.
  2. Press the mixture into the bottom of a greased 9x9 inch baking pan. Bake for 10 minutes.
Make the filling
  1. In a separate bowl, whisk together the sugar, eggs, flour, vanilla, and salt until smooth.
  2. Fold in the chopped rhubarb until evenly coated.
Bake the bars
  1. Pour the rhubarb filling over the pre-baked crust. Bake for an additional 30 minutes or until the filling is set.
  2. Allow to cool completely before cutting into bars.
