Ingredients
  

Oil and Chicken
  • 2 tablespoons refined coconut oil or olive oil divided
  • 4 pieces skinless, boneless chicken breasts 1 1/2 to 2 pounds
  • 1 3/4 teaspoons kosher salt divided, plus more to taste
Vegetables
  • 2 large shallots peeled and sliced
  • 12 ounces fresh green beans trimmed
  • 3 cloves garlic minced
  • 1 1/2 teaspoons fresh ginger grated or finely minced
Liquids
  • 3/4 cup low-sodium chicken broth
  • 1 can (13.5-ounce) coconut cream shaken well
Flavorings
  • 1 heaping teaspoon freshly grated lime zest from about 2 limes
  • 1 tablespoon fresh lime juice from 1 to 2 limes, plus more to taste
Garnishes
  • fresh cilantro for garnish, optional
  • lime wedges for serving, optional
  • toasted coconut for serving, optional
  • freshly steamed rice for serving, optional

Cooking Steps
  1. Heat 1 1/2 tablespoons of oil in a large deep skillet over medium-high heat. Season chicken with 1 teaspoon of kosher salt. Cook chicken until golden brown, about 4 to 6 minutes per side. Transfer to a plate and cover with foil.
  2. Lower heat to medium and add remaining 1/2 tablespoon oil. Add shallots and 3/4 teaspoon salt, saut? until beginning to turn translucent, about 1 to 2 minutes.
  3. Add green beans and garlic, tossing until fragrant, about 1 minute. Add ginger and stir, then add broth, scraping the bottom of the pan to release any stuck-on bits.
  4. Add coconut cream and stir to combine. Return chicken to the pan, nestling it among the green beans. Bring to a simmer and cook until chicken registers 165?F in the thickest parts, about 7 to 10 minutes.
  5. Turn off heat. Stir in lime zest and lime juice, adjusting flavor with more juice and/or salt as needed. Top with cilantro and serve with coconut and lime wedges on the side, along with rice.
