Ingredients
  

Onion Mixture
  • 2 medium yellow onions thinly sliced
  • 1 cup vegetable oil for frying
  • 4 cloves garlic thinly sliced
  • 1 tablespoon red chili flakes adjust to taste
  • 1 teaspoon salt
Chili Oil
  • 1 cup neutral oil such as canola or grapeseed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar

Method
 

Prepare the Onion Mixture
  1. Heat the vegetable oil in a frying pan over medium heat.
  2. Add the sliced onions and cook until golden brown and crispy, about 15-20 minutes.
  3. Add the garlic and red chili flakes, cooking for an additional 2-3 minutes until fragrant.
  4. Remove from heat and drain on paper towels. Season with salt.
Make the Chili Oil
  1. In a separate saucepan, combine the neutral oil, soy sauce, sesame oil, and sugar.
  2. Heat over low heat until warm, stirring to dissolve the sugar.
  3. Remove from heat and let cool slightly.
Combine and Store
  1. In a glass jar, combine the crispy onion mixture and the chili oil.
  2. Stir well to combine and let cool completely before sealing.
  3. Store in the refrigerator for up to 2 weeks.
