Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Filling
  • 1/2 cup cottage cheese preferably low-fat
  • 2 tablespoons mayonnaise optional for creaminess
  • 1 teaspoon Dijon mustard for flavor
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
  • 1 tablespoon chives chopped, for garnish

Method
 

Prepare the Eggs
  1. Place the eggs in a pot and cover them with water. Bring to a boil, then cover and remove from heat. Let sit for 10 minutes.
  2. After 10 minutes, transfer the eggs to an ice bath to cool for 5 minutes.
  3. Peel the cooled eggs and slice them in half lengthwise.
Make the Filling
  1. Remove the yolks from the egg whites and place them in a mixing bowl.
  2. Add cottage cheese, mayonnaise, Dijon mustard, salt, and black pepper to the yolks. Mash together with a fork until smooth.
  3. Spoon the filling back into the egg whites.
  4. Garnish with chopped chives before serving.
