Ingredients
  

Wet Ingredients
  • 1 cup cottage cheese preferably low-fat
  • 2 large eggs
  • 1 cup milk any type
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar optional
For Serving
  • 1 cup fresh fruit such as berries or sliced bananas
  • 1 cup maple syrup optional

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the cottage cheese, eggs, milk, and vanilla extract until smooth.
  2. In another bowl, combine the flour, baking powder, salt, and sugar.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Cook the Waffles
  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. Pour the batter into the preheated waffle iron, using enough to cover the surface.
  3. Cook until the waffles are golden brown and crisp, about 5-7 minutes.
  4. Remove the waffles and repeat with the remaining batter.
Serve
  1. Serve the waffles warm, topped with fresh fruit and maple syrup if desired.
