Ingredients
  

Casserole Base
  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 cup salsa mild or spicy, as preferred
  • 1 tsp chili powder
  • 1 tsp cumin
Cornbread Topping
  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg
  • 1 tsp baking powder
  • 1 cup shredded cheese cheddar or your choice

Method
 

Prepare the Casserole Base
  1. Preheat the oven to 400?F (200?C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add black beans, corn, salsa, chili powder, and cumin to the skillet. Stir to combine and cook for 5 minutes.
  4. Transfer the mixture to a greased casserole dish.
Make the Cornbread Topping
  1. In a mixing bowl, combine cornmeal, milk, egg, and baking powder. Mix until smooth.
  2. Pour the cornbread mixture over the beef mixture in the casserole dish.
  3. Sprinkle shredded cheese on top.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through.
  2. Let cool for a few minutes before serving.
