Ingredients
  

Vegetables
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup chopped red bell pepper
  • 1 cup chopped green onions
Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Toppings
  • 1 cup crushed tortilla chips for crunch
  • 1/4 cup fresh cilantro chopped

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded cabbage, shredded carrots, chopped red bell pepper, and chopped green onions.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, smoked paprika, salt, and black pepper until smooth.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss until well combined. Top with crushed tortilla chips and chopped cilantro before serving.
