Ingredients
  

Chicken and Orzo
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup orzo pasta
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream
  • 1 cup fresh spinach roughly chopped
  • 1 cup parmesan cheese grated
Vegetables and Seasoning
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Cook the Chicken
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Add the chicken pieces, oregano, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
Prepare the Orzo
  1. Pour in the chicken broth and bring to a boil. Stir in the orzo pasta and reduce heat to a simmer.
  2. Cook for about 10-12 minutes, or until the orzo is al dente, stirring occasionally.
Finish the Dish
  1. Stir in the heavy cream, spinach, and grated parmesan cheese. Cook for an additional 2-3 minutes until the spinach is wilted and the sauce is creamy.
  2. Adjust seasoning with salt and pepper if needed. Serve warm.
