Ingredients
  

Pasta
  • 1 cup orzo uncooked
Vegetables
  • 2 cups fresh spinach washed and chopped
  • 3 cloves garlic minced
Dairy
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
Seasonings
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon olive oil

Method
 

Cooking Orzo
  1. Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.
Preparing the Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and saut? for 1-2 minutes until fragrant.
  2. Add the chopped spinach and cook until wilted, about 3-4 minutes.
  3. Pour in the heavy cream and bring to a simmer. Stir in the grated parmesan cheese until melted and smooth.
  4. Season with salt and pepper to taste.
Combining Ingredients
  1. Add the cooked orzo to the skillet and toss to combine with the creamy spinach sauce. Cook for an additional 2-3 minutes to heat through.
  2. Serve warm, garnished with extra parmesan if desired.
