Ingredients
  

Seafood
  • 1 lb shrimp peeled and deveined
  • 1 lb scallops fresh or frozen
  • 1 lb white fish such as cod or haddock
Vegetables
  • 1 cup onion diced
  • 1 cup celery diced
  • 1 cup carrots diced
  • 2 cups potatoes peeled and diced
Liquids
  • 4 cups fish stock
  • 1 cup heavy cream
  • 1 cup milk
Herbs and Spices
  • 2 tbsp fresh parsley chopped
  • 1 tsp thyme dried
  • 1 tsp black pepper to taste
  • 1 tsp salt to taste

Method
 

Prepare the Base
  1. In a large pot, saut? the onion, celery, and carrots over medium heat until softened, about 5 minutes.
  2. Add the potatoes and fish stock, bringing to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
Add Seafood
  1. Stir in the shrimp, scallops, and white fish. Cook for an additional 5-7 minutes until seafood is cooked through.
  2. Pour in the heavy cream and milk, stirring to combine. Season with thyme, parsley, salt, and pepper.
Serve
  1. Ladle the chowder into bowls and garnish with additional parsley if desired. Serve hot.

Notes

For a thicker chowder, you can mash some of the potatoes before adding the seafood.
