Method
Prepare the Corn
- Grill the corn on medium heat until charred, about 10 minutes. Remove kernels from the cob.
Make the Creamy Mixture
- In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, cotija cheese, and cilantro. Mix well.
Combine and Serve
- Add the grilled corn to the creamy mixture and stir until well coated.
- Spoon the mixture into cups and top with extra cotija cheese and chili powder. Serve with lime wedges.
