Ingredients
  

Corn Base
  • 4 ears sweet corn grilled and kernels removed
Creamy Mixture
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1/4 cup cotija cheese crumbled
  • 2 tablespoons cilantro chopped
Toppings
  • 1 tablespoon extra cotija cheese for garnish
  • 1 tablespoon chili powder for garnish
  • 1 lime lime wedges for serving

Method
 

Prepare the Corn
  1. Grill the corn on medium heat until charred, about 10 minutes. Remove kernels from the cob.
Make the Creamy Mixture
  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, cotija cheese, and cilantro. Mix well.
Combine and Serve
  1. Add the grilled corn to the creamy mixture and stir until well coated.
  2. Spoon the mixture into cups and top with extra cotija cheese and chili powder. Serve with lime wedges.
