Cheese and Meats
  • 1 cup mozzarella balls small size
  • 2 tablespoons sun-dried tomatoes in oil finely chopped
  • 2 tablespoons kalamata olives finely chopped
  • 2 tablespoons capers for garnish
  • 2 ounces prosciutto thinly sliced
  • 2 ounces Genoa salami thinly sliced
  • 2 ounces sopressata thinly sliced
  • 2 ounces thinly sliced ham
  • toothpicks for skewering

Method
 

Preparation Steps
  1. Using a sharp knife, cut a small indent in the mozzarella balls and set aside.
  2. Finely chop the sun-dried tomatoes and kalamata olives to form the eyes to fit into the indents in the mozzarella balls.
  3. Thinly slice the meat into 1/4 to 1/2 inch strips depending on the size of the mozzarella balls.
  4. Carefully wrap the mozzarella balls with the slices of meat.
  5. Skewer the wrapped mozzarella balls on a toothpick and garnish with either a tomato, kalamata olive, or caper eyeball.
  6. Chill before serving on your Halloween charcuterie board.
