Ingredients

Custard Mixture
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
Bread
  • 8 slices brioche or challah bread thickly sliced
Topping
  • 1/4 cup granulated sugar for caramelizing

Method

Prepare the Custard
  1. In a mixing bowl, whisk together eggs, heavy cream, whole milk, granulated sugar, vanilla extract, and salt until well combined.
Assemble the French Toast
  1. Arrange the slices of bread in a baking dish and pour the custard mixture over the bread, ensuring all pieces are soaked. Cover and refrigerate for at least 30 minutes or overnight.
Bake the French Toast
  1. Preheat the oven to 350?F (175?C). Bake the soaked bread for 25-30 minutes, or until the custard is set and the top is golden.
Caramelize the Sugar
  1. Sprinkle granulated sugar evenly over the top of the baked French toast. Use a blow torch to caramelize the sugar until it forms a crispy crust.
Serve
  1. Allow to cool slightly, then slice and serve warm, optionally with fresh berries or whipped cream.

Notes

For best results, use day-old bread to absorb the custard without becoming too soggy.
