Ingredients
  

  • 1 pack halloumi
  • 1 teaspoon olive oil for drizzling
  • 1 large head butter lettuce
  • 1 avocado sliced
  • 2 cucumbers sliced
  • 5 radishes sliced
  • to taste fresh herbs chives, mint, and dill
  • 1/2 cup vinaigrette of choice
  • to taste champagne vinegar
  • to taste lemon juice
  • to taste honey
  • to taste tahini or mustard
  • 1 shallot finely chopped
  • to taste salt
  • to taste pepper

  • mason jar
  • Large mixing bowl

Method
 

Vinaigrette Preparation
  1. Mix all vinaigrette ingredients together in a small bowl or mason jar. Taste and adjust ratios as desired.
Halloumi Preparation
  1. Line a sheet tray with parchment paper and preheat the oven to 450 F. Tear halloumi into large chunks, drizzle with olive oil, and arrange in an even layer on a tray. Bake for 10-12 minutes until golden brown, flip, and bake for another 10 minutes.
  2. Remove from oven and set aside to cool.
Salad Assembly
  1. On a large serving platter, arrange the lettuce, avocado, cucumbers, radishes, and herbs. Sprinkle with salt and pepper.
  2. Add the baked halloumi on top.
Serving
  1. Dress the salad with the prepared vinaigrette just before serving. Enjoy!
