Ingredients
  

Slaw Ingredients
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup red bell pepper thinly sliced
  • 1 cup green onions sliced
  • 1 cup chopped cilantro
  • 1 cup peanuts chopped or crushed
Dressing Ingredients
  • 1/4 cup peanut butter smooth
  • 2 tablespoons soy sauce low sodium preferred
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger freshly grated
  • 1 clove garlic minced
  • 2 tablespoons water to thin the dressing

Method
 

Prepare the Slaw
  1. In a large mixing bowl, combine the shredded cabbage, carrots, red bell pepper, green onions, cilantro, and peanuts.
Make the Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, ginger, garlic, and water until smooth.
Combine and Serve
  1. Pour the dressing over the slaw mixture and toss until everything is well coated. Serve immediately or refrigerate for 30 minutes to enhance flavors.
