Prepare Dough
- In a small bowl, combine the warm milk, yeast, and sugar. Let sit and foam for about 5 minutes.
- In a stand mixer bowl, add flour, sugar, salt, egg yolks, vanilla extract, and the activated yeast mixture. Knead for at least 10 minutes until the dough forms a ball and pulls away from the bowl.
- Slowly add the softened butter until fully incorporated. Knead for an additional 12-15 minutes until the dough is smooth and not sticky.
- Place the dough in an oiled bowl, cover, and let rise for at least 1 hour.
Prepare Filling
- In a pan over medium heat, add butter and brown sugar. Once melted, add the diced apples and spices, cooking until tender. Set aside to cool.
- In a bowl, mix softened cream cheese, granulated sugar, and vanilla extract until smooth.
Prepare Crumble Topping
- For the crumble topping, melt butter, then mix in brown sugar, cinnamon, and flour until combined. Let cool to room temperature.
Shape and Bake
- Prepare a large baking sheet lined with parchment paper. After the dough has risen, divide into 10 equal pieces and roll each into a ball. Transfer to a baking sheet, cover with plastic wrap, and let rise for 30-45 minutes.
- Preheat oven to 375?F.
- After the second rise, create an indent in each bun, fill with sweet cream cheese, top with apple filling, and sprinkle with crumble topping.
- Brush the sides with egg wash or milk.
- Bake for 15-18 minutes until golden brown. Let cool for at least 5 minutes before dusting with powdered sugar.
